Ingredients

375g
butter, softened
1 tsp
almond essence
1 1/2 cups
caster sugar
6
eggs
3/4 cup
self-raising flour
1 1/2 cups
all purpose flour
1/2 cup
almond meal

Directions

  1. Preheat oven to 160 degrees. Grease a deep 23cm square cake pan.
  2. Beat butter, essence and sugar in a large bowl with an electric mixer until light and fluffy. Beat in eggs, once at a time until combined after additions.
  3. Using a wooden spoon, stir in flours and almond meal in two batches. Spread mixture into prepared pan.
  4. Bake for about 1 hour. Stand cake for 5 minutes then turn onto a wire rack. Turn cake top-side up to cool. Dust cake with icing sugar and serve.
