Ingredients

- almond essence

- caster sugar

- 3/4 cup
- self-raising flour
- 1 1/2 cups
- all purpose flour
- 1/2 cup
- almond meal
Directions
- Preheat oven to 160 degrees. Grease a deep 23cm square cake pan.
- Beat butter, essence and sugar in a large bowl with an electric mixer until light and fluffy. Beat in eggs, once at a time until combined after additions.
- Using a wooden spoon, stir in flours and almond meal in two batches. Spread mixture into prepared pan.
- Bake for about 1 hour. Stand cake for 5 minutes then turn onto a wire rack. Turn cake top-side up to cool. Dust cake with icing sugar and serve.
