Ingredients

125g
butter, softened
3/4 cup
firmly packed brown sugar
2
eggs
1 1/2 cups
self raising flour
1/2 tsp
bicarbonate of soda
1 tsp
mixed spice
1 cup
mashed banana
1/2 cup
sour cream
1/4 cup
milk

Passionfruit Icing

2 tbsp
passionfruit pulp (approx)
1 tsp
butter, softened
1 1/2 cups
icing sugar

Directions

  1. Preheat oven to 160 degrees.
  2. Grease a 15cm x 25cm loaf pan.
  3. Beat butter and sugar in a bowl with an electric mixed until light and fluffy.
  4. Beat in eggs, one at a time until combined.
  5. Using a wooden spoon, stir in sifted dry ingredients, banana, cream and milk.
  6. Pour mix into prepared cake pan and bake for 50 minutes.
  7. Stand cake for 5 minutes then turn out onto wire rack. Turn cake top side up to cool.
  8. Once the cake has cooled completely, place the icing sugar, butter and enough pulp to make a firm paste in a heat proof bowl.
  9. Stir over hot water until icing is of spreading consistency, taking care not to overheat. Spread icing over cake.

Notes and Tips

  1. The icing must be used immediately otherwise it will start to set once removed from the heat.
